This course will cover basic knowledge and familiarity of the principal law and regulations governing raw and processed foods. Class meets during weeks 1-5.

Learning Outcomes

1To gain a basic knowledge and familiarity of the principal laws and regulations governing raw and processed foods.

2To develop an understanding of the law's core - adulteration and misbranding.

3To learn basic food labeling and health claim regulations.

4To obtain a working knowledge of US food law and promulgated regulations, current issues concerning food regulations, and how to obtain further information for specific regulatory problems.
